A new USDA rule will allow pork processing plants to exercise more control over the food safety involving their animals by company employees will sort healthy pigs from unhealthy ones and identify defects on carcasses after slaughter. Federal employees are expressing outrage over the plan, saying that it devalues their work and careers and threatens the safety of consumers.
